To make

Pre-heat the oven to 160 degrees C and put a metal baking tray in to heat up.

Put the nuts with the other ingredients in a large bowl and mix well – it takes a bit of mixing to coat all of the nuts with the mixture

When the oven is up to temperature and the tray is hot, tip the mixture onto the tray and flatten into a single layer.

Roast for about 8-10 minutes, but keep checking as they can burn very easily, especially with the honey.

When the nuts are a lovely red-gold brown, take them out of the oven and let them cool in the tray before sealing in an airtight jar or tub.

 

The tray will come clean easily if you leave it to soak for an hour.

Roasted and Spiced Mixed Nuts

 

These are an absolute favourite both with my hubby and me and with various guests and visitors. I always have a supply of mixed nuts ready to be roasted so we never run out. I actually make a large quantity and keep them in a big snack tub in the pantry but I have to avoid nibbling at them because although they're much more nutritious that your average bagged or packaged snack, they are quite high in calories and it's easy to eat too many if you're trying to lose weight.

Our local supermarket sells bags of raw nuts but you may find suppliers who will sell loose by weight, or you can order over the internet.

 

Ingredients

200g raw macadamia nuts

200g raw, unblanched almonds

200g raw walnut halves

150g raw cashews

2 tblsp olive oil

1 tblsp clear honey

1-2 tsps smoked paprika, to taste

sea salt to taste – you can get away with more salt because it is balanced by the sweetness of the honey
